
This soup by Revive has lovely flavours, the kumara makes it go nice and thick, and the lime juice adds a subtle pacific flavour.
Serve with some yummy toast, kumara bread goes well!
Makes 8x 1 cup servesINGREDIENTS
1 onion
1 cup celery diced
1 tablespoon chopped ginger or ginger puree
1 tablespoon oil
1 teaspoon turmeric powder
2 teaspoons curry powder
5 cups boiling water
1 cup red lentils
3 cups red kumara diced (around 2 kumara)
1 1/2 teaspoons salt
200ml coconut cream
juice of 2 limes
garnish: parsley
METHOD
Sauté onions, celery, ginger and oil in a pot until the onion is clear.
Add spices and mix for around 30 seconds.
Add water, lentils sand kumara and simmer for around 15 minutes or until lentils are soft and kumara is cooked.
Blend with a stick blender.
Mix in remaining ingredients and serve garnished with parsley.
Do not add salt until the end as it can inhibit the lentils cooking properly.
This is a very thick soup, however you can add water to thin it down if you like it runnier.
