
This salad by Revive is full of freshness! Use any combination of beans and colourful vegetables for a nice crunchy salad. This is a versatile salad and often I'll substitute ingredients for what I have growing in my garden - i.e. spring onions instead of red onion, garlic chives instead of garlic cloves.
Makes 6x 1 cup servesINGREDIENTS
2 x 400g (12oz) tins butter beans
2 cups cherry tomatoes halved
1 cup celery roughly chopped
1 cup of green capsicum roughly diced
1/2 cup olives pitted
1/2 teaspoon salt
1/4 red onion
1/4 cup vinaigrette
Vinaigrette
2 tablespoons oil
1 tablespoon lemon juice
1 teaspoon apple cider vinegar
2 teaspoons honey (leave it out to make it Vegan)
1/4 teaspoon salt
1/4 cup Italian parsley, finely chopped
1 clove garlic crushed.
METHOD
Combine the vinaigrette ingredients in a small bowl or cup and stir.
Combine the salad ingredients in a large bowl and pour over the vinaigrette.
